Here's my recipe to make two cocktails:
- One can of coconut water - I get the ones which contain real coconut pieces from the world foods section of the supermarket. They're so sweet and delicious and really low calorie considering how yummy they are.
- 200ml of coconut milk - you can use proper, full fat or KoKo, which doesn't have a coconut taste but will add a creaminess to the colour and consistency of the cocktail.
- Lime juice and a slice of lime
- Two teaspoons of agave nectar
- Low calorie tonic water to top it up - about 150ml
- Pour all together and mix it up - finish with a cute straw, put your feet up and pretend it's summer!
