Tropical Virgin Coconut Cocktails

My boyfriend had been away on a course recently, which also happened to include a fair bit of socialising. Knowing he wouldn't want any alcohol - and knowing I really shouldn't...I whipped up some virgin pinacoldas. The best part of this recipe is that they are super low calorie yet so delicious. We sipped them alongside my favourite salad ever - watermelon and feta!

Here's my recipe to make two cocktails: 
  • One can of coconut water - I get the ones which contain real coconut pieces from the world foods section of the supermarket. They're so sweet and delicious and really low calorie considering how yummy they are.
  • 200ml of coconut milk - you can use proper, full fat or KoKo, which doesn't have a coconut taste but will add a creaminess to the colour and consistency of the cocktail.
  • Lime juice and a slice of lime
  • Two teaspoons of agave nectar
  • Low calorie tonic water to top it up - about 150ml
  • Pour all together and mix it up - finish with a cute straw, put your feet up and pretend it's summer!
